Remove Plex media server references 0059445b22

Jellyfin has replaced Plex as the media server. This removes:
- plex_metrics ansible role
- Plex Grafana dashboard
- Plex log collection from Alloy
- Plex from indri-services-check

The plex-metrics LaunchAgent was unloaded and cleaned up on indri.
